Last night my son approached me and said he wants to eat carbonara. I told him I’ll just cook the pasta first and then the carbonara sauce in the morning for their breakfast. I noticed his sad face and disappointment so eventhough it’s quite late already I decided to cook the carbonara. We do not have house help so this working mom has to work overtime with some house chores like this.

Anyway, while cooking I did some experiments on my carbonara recipe since I’m on a tight budget i modify some of the ingredients. Instead of using ham and bacon I just used cheesedogs, then added some left over chicken. We do not have cream of mushroom so I just used chicken broth and Nestle cream. I put some mushrooms and cheddar cheese in placed of quick melt and parmesan cheese. The outcome? my kids’ loved it! Well, I know it’s not because i’m a good cook, they’re just fond of eating that’s why..hehe.
